Microwave Cheesecake (Single Serving)

1/3 cup softened cream cheese
1 egg, beaten
1 1/2 tablespoon coconut sugar
1/3 teaspoon vanilla

  1. Mix until smooth.
  2. Pour into butter oiled ramekin.
  3. Set time 2 min. Cool 15.
  4. Turn out onto plate. Serve plain or topped with your favorite jam or sauce.
    NOTE: I used homemade cranberry sauce on this one.

Coconut Macaroons

  • 3 cups coconut, shredded
  • 1 can (14 oz.) organic sweet, condensed milk
  • 1/3 cup coconut flour
  1. Blend all ingredients.
  2. Form 2-inch rounds and place them on a parchment lined baking sheet.
  3. Press down a bit with a fork and bake at 350 degrees for 20 minutes.
    • NOTE: Keep a bowl of water handy to wet hands if the dough sticks. Dip the fork in it as well when using it to flatten the rounds a bit.

Garlic Cheese Biscuits

Gluten free and low oxalate made with coconut flour. Recipe (makes 6)

  • 4 tbsp. coconut flour
  • 1/2 tsp. baking powder
  • 1 cup cheddar cheese, shredded
  • 2 eggs, beaten
  • 3 garlic cloves, minced
  • 3 tbsp. milk
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients and roll into 6 rounds.
  3. Flatten slightly on a parchment lined baking sheet.
  4. Bake 20 minutes.
    • NOTE: I like to melt butter with garlic powder and bit of dried parsley and top the biscuits while they are warm.

Sweet and Spicy Stir-Fry

  • 2 tbsp. coconut oil
  • ½ yellow onion, thinly sliced
  • ½ red bell pepper, thinly sliced
  • 1 lg. boneless chicken breast filet, cut into ¾ inch pieces
  • 2 garlic cloves, crushed
  • ½ tsp. white pepper
  • 1 head Chinese (napa or savoy) cabbage  
  • 4 tbsp. rice wine (may substitute with any dry white wine)
  • ¼ cup apricot jam
  • Cooked rice (optional)
  1. Heat the wok or skillet over high heat then add the coconut oil.
  2. When the oil is heated, add onion and bell pepper and cook until tender.
  3. Add the cut-up chicken and stir-fry for about 3 minutes.
  4. Season with garlic and white pepper.
  5. Add the cabbage and continue to stir-fry, about 8 minutes, until it starts to brown and stick to the skillet.  
  6. Reduce the heat to medium-high. Add the wine and the apricot jam and stir-fry for another minute to blend the flavors.  
  7. Transfer to a serving dish and serve hot or over cooked rice for a fuller meal.

Coconut Flour Bread

(Low oxalate and gluten free)

  • 6 eggs, room temperature
  • 1/4 cup butter or coconut oil, melted
  • 1/2 cup milk
  • 3/4 cup coconut flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  1. Preheat oven to 350 degrees.
  2. mix wet ingredients in a medium bowl and whisk dry ingredients together in another bowl.
  3. Combine the wet and dry ingredients then pour into an oiled or silicon loaf pan.
  4. Bake 40 minutes.
  5. Cool for at least an hour before slicing.
