Microwave Cheesecake

Single Serving
1/3 cup softened cream cheese
1 egg, beaten
1 1/2 tablespoon coconut sugar
1/3 teaspoon vanilla
Mix until smooth. Pour into butter oiled ramekin
Set time 2 min. Cool 15. Turn out onto plate. Serve plain or topped with your favorite jam or sauce.
I used homemade cranberry sauce on this one.



Sweet and Spicy Stir-Fry
- 2 tbsp. coconut oil
- ½ yellow onion, thinly sliced
- ½ red bell pepper, thinly sliced
- 1 lg. boneless chicken breast filet, cut into ¾ inch pieces
- 2 garlic cloves, crushed
- ½ tsp. white pepper
- 1 head Chinese (napa or savoy) cabbage
- 4 tbsp. rice wine (may substitute with any dry white wine)
- ¼ cup apricot jam
- Cooked rice (optional)
- Heat the wok or skillet over high heat then add the coconut oil.
- When the oil is heated, add onion and bell pepper and cook until tender.
- Add the cut up chicken and stir-fry for about 3 minutes.
- Season with garlic and white pepper.
- Add the cabbage and continue to stir-fry, about 8 minutes, until it starts to brown and stick to the skillet.
- Reduce the heat to medium-high. Add the wine and the apricot jam and stir-fry for another minute to blend the flavors.
- Transfer to a serving dish, and serve hot or over cooked rice for a fuller meal.
